Taco-Stuffed Peppers



Here's what you need:
6-8 Medium/Large Bell Peppers - ensure they have a flat base so they will stand up when cooking
1 lb Ground Beef
1 Medium Yellow Onion - Diced
1 Can Black Beans - Drained
1 Cup Cooked Brown Rice
1 Cup Frozen Corn
1 Jar Medium Chunky Salsa
1 Packet (about 2 Tbsp.) of Taco Seasoning Mix*
1 1/2 - 2 Cups Grated Cheddar/Mexican Blend Cheese

2 Tbsp. of taco seasoning, may be more or less depending on what kind you are using
1/2 cup of water
Egg roll wrappers
Diced tomatoes
Diced onions
Shredded/crumbled cheese
Egg wash
Vegetable oil for frying
Salsa for dipping

Mozzarella Stuffed Chicken Parm Meatballs



Serves: As many as you desire
Combine 1 lb ground chicken. 1/4 cup finely chopped white onion, 1/2 cup parmesan, 1/2 cup panko bread crumbs, 1/2 cup chopped parsley, 1 tsp black pepper, 1 tsp salt, 1/2 TBSP fennel seed, 1 clove garlic minced, 1/2 TBSP lemon zest, and 1 egg in a large bowl.
